Asian Noodle Salad

Eat the rainbow with this colourful and crunchy Asian-inspired salad. Quick to prepare with a delicious dressing to match, my Asian Noodle Salad is perfect for easy dinner and lunches.

Ingredients

Salad

  • Red cabbage, thinly sliced
  • Romaine lettuce, roughly cut
  • Carrot, thinly sliced
  • Red capsicum, thinly sliced
  • Red onion, sliced
  • Chickpeas (125g tin), rinsed
  • Soba noodles
  • Avocado, diced or sliced
  • 1 egg, hard boiled

 
 
Asian Dressing

  • 1/2 cup natural almond butter
  • 2 Tbsp lemon juice
  • 1 Tbsp tamari sauce
  • 2cm fresh ginger, thinly sliced
  • 2 tsp crushed garlic
  • 1 pitted date
  • 1-2 tsp chilli flakes
  • 1/3 cup water

 

Method

Toss cabbage, lettuce, carrot, capsicum, onion, and chickpeas in a bowl

To make the Asian Dressing, simply throw all ingredients into a blender and whiz it up til smooth

Boil the egg to your liking – I prefer hard-boiled, but semi-soft boiled would work fine too

Cook a single serve of soba noodles as per packet instructions (they only take 4 mins – win!)

Mix cooked soba noodles through salad, and top with egg and avocado

Drizzle Asian Dressing over the top, mix through and enjoy beautiful!
