Beat-The-Bloat Bolognese

Love pasta but hate the full and bloated feeling you get afterwards? Girl, I hear you! Say goodbye to gut bloat with this delish Bolognese inspired dish.

Ingredients

  • 2 tsp olive oil (I use cold pressed)
  • 1 brown onion
  • 1 carrot
  • 250g button mushrooms
  • 1 sachet (2 Tbsp) tomato paste
  • 1 Tbsp minced garlic (from jar)
  • Salt and pepper to taste
  • 500g Turkey mince
  • 2 400g tinned tomatoes
  • 2 Tbsp balsamic vinegar
  • 500g Pulse Pasta (made from peas, lentils, chickpeas and borlotti beans)
  • Basil leaves to serve if you’re feeling extra (i.e. ALWAYS!)

Method

Finely dice onion, mushrooms, and carrots (or, if you have a love affair with your food processor like me, simply whiz it up in there until finely chopped!)

Heat oil in pan

Add veggies, cook for 5 minutes

Add tomato paste, garlic and salt and pepper cook for 2 minutes

Add turkey, cook for 5 minutes or until brown

Add canned tomatoes and balsamic vinegar, turn down the heat and let that sauce simmer for at least 10 minutes (if you’re feeling a bit Masterchef and have the time, give your sauce an extra kick by setting it to slowly simmer on an extremely low heat for up to an hour, checking every 20 minutes and adding a little bit of water if the sauce needs extra moisture. This gives your sauce an amazing rich and robust flavour.)

Cook pasta as directed on packet

Serve pasta and mince in bowl

Sprinkle with some fresh basil ‘cause you’re worth it
