Easy Mexican Bowl

This fast and flavoursome one-pot wonder can be thrown together in a flash, making it the perfect easy weeknight meal. Olé!

Ingredients

  • 2 tsp olive oil (I use cold pressed)
  • 1 red onion
  • 1 red capsicum
  • 1 green capsicum
  • 1 Tbsp crushed garlic (from jar)
  • 2 tsp smoked paprika
  • 2 tsp dried oregano
  • 1 tsp ground cumin
  • 500g lean turkey mince
  • 1 sachet (2 Tbsp) tomato paste
  • 1/2 Tbsp bone broth paste (mix with 1 cup of boiling water)
  • 1 cup of cooked white Basmati rice (alternatively, use 250g pack pre cooked microwave rice)
  • Diced avocado to serve
  • Sliced lemon to serve
  • Coriander to garnish

Method

Heat oil in pan

Add onion and capsicum

Cook for 5 minutes

Add garlic, spices and stir for 30 seconds

Add mince, cook for 6-10 minutes or until brown

Add tomato paste and bone broth, bring to simmer and cook for 5 minutes

Add rice and cook for 10 minutes or until liquid has absorbed

Top with avocado, lime and coriander to taste.
