Freaking Good Frittatas

Another one of my favourite meal-prep miracles! Packed full of protein and vegies, these totally snack-worthy bite-size frittatas are ideal for kid’s lunchboxes and curbing those 3pm cravings.

Ingredients

  • 7 free range eggs
  • ¾ cup almond milk – or milk of choice
  • Salt and pepper to taste
  • Chilli to taste
  • 1 ½ cup chopped kale
  • ½ cup cottage cheese
  • ½ red capsicum
  • 1 carrot
  • 2 spring onions

 

 

Method

Preheat oven to 180 degrees Celsius

Whisk eggs, milk, salt and pepper, chilli, cottage cheese until well mixed

Finely dice capsicum, carrot and onion, add to mix

Add chopped kale and mix thoroughly

Spoon mixture into rubber muffin trays

Bake for 30-35 minutes or until cooked through (to check, stick a fork in centre of one fritatta – if the fork comes out clean, it’s cooked!)
