Spicy Chicken Soup

As the weather starts cooling down, it’s inevitable that we start craving more hearty, soul-warming food, and this slow-cooked Spicy Chicken Soup is guaranteed to heat things up! Loaded with vegies, tender chicken, and just the right amount of spice, this is the perfect healthy winter warmer dish.

 

Ingredients

  • 1 tbsp olive oil
  • 2 chicken breast
  • 1 red onion, sliced
  • 1 carrot, chopped
  • 3 celery sticks, chopped
  • 1 tbsp Moroccan seasoning
  • 400g can diced tomatoes
  • 5 cups veggie stock
  • 1/2 cup green lentils
  • 1/4 cup red lentils
  • 400g can chickpeas, drained
  • 1 cup frozen broad beans

 

Method

Heat oil in fry pan and cook chicken for 2 minutes each side or until brown all over

Place chicken in slow cooker, toss in all other ingredients and stir

Cover and slow cook for 4 hours on high or 6-8 hours on low

Enjoy with a few pieces of toasted sourdough on the side
